Scalloed Potatoes with Cod

1 Lb. fresh Cod fillets (scaled and boned)

4 large white potatoes (peeled and rinsed)

1/2 cup cream mixed with 2 tblsps of water

1/4 cup chopped fresh dill

1 small onion (finely minced)

2 tblsp. butter

salt and pepper to taste

 

Finely slice potatoes

Spray 8-1/2 X 11 glass baking dish with Pam. Place Cod fillets in pan and follow with potatoes, layering them on top of fish. Pour cream over all and top with dill, onion, salt & pepper. Place small pats of butter over all of this, distributing it evenly and bake at 400 degrees for about 25 minutes until potatoes are fork tender.

This is very good served with a green salad of arugula, endive and a light cranberry vinagrette dressing.
